A sizzler is a meat-based dish that is steaming hot when served. Considered a dish created in Mumbai, India, it is served to customers on hot metal plates placed on a wooden tray. It is said to be derived from teppanyaki, a Japanese dish where meat and vegetables are prepared on a steaming hot griddle. The idea was to create a crunchy exterior, with the interior dish being soft and damp. The Japanese dish was said to have been served at an American food chain named Sizzler Family Steak Housein Culver City, California. This eatery was started by a couple, Del and Helen Johnson.

How sizzlers caught the imagination of foodies

When Sizzler Family Steak House was thriving, it had over 270 outlets throughout the U.S., mostly on the West Coast. It became famous for its steaks made with ground beef.

Sizzler is a wholesome dish as it contains meat, vegetables, rice, tomatoes, and cabbage, among other things. Because of its unique method of preparation and the ingredients involved, sizzler rooms have gained acceptance in various countries. They are popular in the United States, Mexico, Australia, and the United Arab Emirates.

The dish got its name, sizzler, because of the hissing noise it makes with the accompanying smoke it lets out. 

In 1975, Vazir Rizvi, a Mumbai-based businessman, started a restaurant and named it ‘Kobe Sizzlers.’ Subsequently, it spread out as a chain, focusing on Mumbai city. Sizzler rooms charmed many people, which led to the opening of other restaurant chains that exclusively sold sizzlers. They were Yoko Sizzlers and Fountain Sizzlers in Mumbai. Pune businessmen also took the cue and opened in their city with Yana and Zamu’s. Other cities, like Kolkata, Goa, Bangalore, Delhi, Hyderabad, etc., opened restaurants that served sizzlers exclusively.

Sizzlers are now being served in tier-2 cities in India as well. They include Chandigarh, Guwahati, Jamshedpur, and more across the length and breadth of India. In addition to various grilled meats like fish, chicken, and steak, sizzlers are also offered in vegetarian options, like paneer.
